Seeing as how this is an older plane, I bet all of the wiring is knob and tube. You'll have to rip it out and pay an electrician exorbitant sums to bring it up to code.  ;)

About the back of the instrument panel, maybe you could write for help to the guys at TVAL. I'm sure you have already checked the pics of their replicas (just in case here is the link: http://thevintageaviator.co.nz/projects/se-5a-reproduction/se5a-walkaround) - If you show them what you are doing I'm sure they will be impressed as much as all of us and maybe they have some pics taken during the building of their replicas showing these eluding details.
