Welcome from the Mountains od North Carolina! It sounds like you are REALLY diving into WW1 in a BIG way. You will find this a very friendly and informative forum!

I grew up in Elizabethton, TN, which is probably just over the hill from you.

Elizabethton is pretty close. I live in Fleetwood between boon and West Jefferson NC. Mountain City TN is only about a 45 minute drive. Going the other way The VA. Border is about 45 minutes.

jumping in with both feet!  That is a nice selection to get

I used to sneak away to Boone in my youth lots of times.  I loved it over there.  There used to a be a nice restaurant called the Turtle's Nest.  Kind of a hole in the wall, but it was really good.  Now it is some vegan or bagel shop or something like that.  I have been to West Jefferson only one once to visit a hobby shop there.  Nice little town.  I also decided to drive by Meat Camp.  I had to see the area and have always wondered why it is called Meat Camp.  Even the fire department retains the name!  I couldn't imagine volunteering at the Meat Camp VFD.  I am sure I have been through Fleetwood, but probably just don't remember.  If I can ever talk the misses into it, I would love to retire in Blowing Rock.

Thanks!  I have decided on my first build, the Sopwith Pup with some Pheon decals.  My kits just left WnW so hopefully I can start the build by the end of April.  Gotta order the decals.  I really like the night Gotha hunters.

Here is a photo taken a couple of years ago from the Blowing RocK. Perhaps the scenery will help you convince the Wife. I assume the Hobby Shop you visited in West Jefferson was the Hobby Barn. Still the only Shop in the Area.
