Very interesting, I have the SH Nieuport 16, which is very nice, but SH really keeps improving their quality as evidenced by their latest kits. One of several I have is an off-topic model (1/72 the McDonnell FH-1 Phantom), but it is a superb little package!
As for 'wishes', there have been some very nice suggestions already, to which I'll support or add some...

I'd support, in order of my like factor:
-Breguet XIV (as much as I like that one, I'm not sure how commercially viable it would be, and it's a big one, too)
-Albatros C.X / C.XII (they shared many parts)
-Phonix D.I/II/III (pretty!)
-Albatros D.III (Oef) (perhaps more up Roden's alley?)
my own suggestions:
-Phonix C.I (wild array of in- and postwar markings for multiple nations (Czech, Hungary, Yugoslavia, Sweden, to name some)
and a pretty machine to look at imho, decent references available as well)
-will never happen but I like it, unlike the crews apparently: SPAD XI / XVI (would look fantastic next to a Roden S.VII and S.XIII)
Out of the box thinking like a Dutchman

-Fokker C.I (hey, they did a Fokker D.II and Bristol M.1c, too!)
-Rumpler C.I (several were interned)
In 1/72:
Sopwith Pup
SPAD VII
Large single or multiple engine aircraft (Friedrichshafen G.III, AEG G.IV, HP O/100 O/400 anyone?)
As much as the Hanriot was important and is wished for, it somehow does not do much for me
